Jean-Yves Cognard with his wife took over the Domaine de Savy
property in 1974. Before that, it had been run by his parents and
grandparents. They work 7 hectares of vines; about half of their
own and the rest on a share-crop basis.
The chais is in Saint-Amour in Beaujolais, however, Domaine de
Savy’s vineyards are just across the D31 in the communes of Chanes
and Chaintré in the Mâconnais.
Most of the wine they produce is white Chardonnay-based Mâcon
(Pouilly Fuissé and Saint-Véran). The wines are crisp, dry and
fruity.
The Cognards also make a stunning Crémant (Blanc de Blanc) which is
a real celebration wine and a little Beaujolais Village and
Beaujolais Blanc.
