The highly successful Domaine
du Colombier is a family property of several generations. Guy Mothe
built up it by starting with a tiny holding and then acquiring small
parcels of land that came up for sale over the years. Currently the
domaine has over 30 hectares of vineyards which are exploited by Guy
and his three sons, Jean-Louis, Thierry and Vincent. Thierry is
responsible for the wine making. The vineyards cover the Chablis
appellation as well as 1er Crus Fourchaume and Vaucoupin and Grand
Cru Bougros. The vines, planted exclusively with chardonnay on
Kimmeridge soil, produce white wines that are dry, clear, crisp and
light with a characteristic yellow colour with subtle reflections of
white-green.
The wine making is carried out
with rigorous care, respecting traditional Burgundian methods but
exploiting the best of modern technologies.
They produce a traditional
style of unoaked Chablis. Just what Chablis should be.
